I just love Kim Barnouin’s Skinny Bitch Ultimate Everyday Cookbook!  She has a quirky personality which makes her book so much fun to read!  Her recipes are delicious and easy to prepare.  One of my favorite appetizer recipes in her book are her Curried Chickpea Cakes.  I’ve made them several times for my family and friends and every time I make them someone asks for the recipe.   Especially my friend Michelle!  I think she loves these more than I do!

Curried Chickpea Cakes

Ingredients:

1 15 oz can chickpeas, drained and rinsed

1/3 cup sliced green onions

1/3 cup light coconut milk

1 teaspoons of evaporated cane sugar

2/3 cups panko breadcrumbs, plus 1/4 for coating

1 teaspoon curry powder

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cumin

2/3 cups brown rice, cooked

1/2 teaspoon salt

Directions:

In a food processor, combine the chickpeas and green onions.  Pulse until combined. Transfer to a large mixing bowl.

In the large bowl add the coconut milk, sugar, 2/3 cup breadcrumbs, curry, cumin, nutmeg and salt.

Stir with a wooden spoon until well combined.  Mold into 10 mini patties. I prefer my chickpea cakes in smaller, appetizer size bites.

Roll the cakes into the reserved breadcrumbs.  Heat a large saute pan with grape seed oil.  Add the chickpea cakes to the pan in batches and saute until each side is golden brown.  Transfer cakes to a papertowel lined plate.  Serve with chopped red pepper and avocado.  I like hot sauce too!
