I made this soup today for lunch!  It is such a rainy, cold Saturday in Rhode Island, so it was extra satisfying to eat it.  What I love about this soup is that I can make it quickly and I usually have all the ingredients on hand in the pantry.  The best surprise, it that I still had thyme leaves growing outside in my herb garden!  Can you believe it? It is January!

Here’s how I made it:

Spinach Tomato Soup

Ingredients:

2-3 tbsp Extra Virgin Olive Oil

1/2 large onion, minced

1 tsp minced garlic

1/2 tsp sea salt

1/2 can of tomato paste

ground pepper to taste (I like a lot!)

1/3 cup vegetable broth

1 28 oz can whole, pealed tomatoes

1 nice handful of baby spinach

2 sprigs of thyme or dried thyme leaves

Directions:

Saute together in the olive oil, the diced onions, garlic, salt and pepper.  Saute until the onions are translucent.

Then, add the tomato paste to the onions and heat it through.  Add the vegetable broth until everything is combined and hot.

Next, add the can of whole tomatoes with the juice, to the saute pan and mix until just about boiling.

Then transfer the contents of the saute pan to the blender and blend on low for about 1 minute or until nicely combined.

Then pour the contents of the blender into a sauce pan and put the flame on medium and simmer for 5- 10 minutes.

Lastly, add a nice handful of spinach to the saucepan and stir until wilted.  Check seasonings, garnish with thyme leaves and serve hot.
