Superbowl oatmeal

Happy Groundhog Day Everyday!  It is also Superbowl Sunday so I made myself a big, “Superbowl” of oatmeal today.  I’ll make it  on the weekends when I have a little more time to make it, savor it, and enjoy it while lounging in my pjs.  This recipe includes “super” fruits and plant foods that are “super” good for you.  Here is how I made it:

Superbowl Oatmeal

Ingredients:

1 cup water

1/2 cup quick cooking oats

dash salt

2 tbsp raisins

1 tsp sun-dried Goji berries (a Himalayan superfruit)

1/8 tsp cinnamon

1/8 tsp stevia sweetener

1 tsp ground flax (a “super” powerful plant food)

1/8 cup walnuts ( “super” healthy for you!)

Directions:

In a small saucepan, bring to a boil the water, salt, raisins, and Goji berries.

Once the water has come to a boil with the raisins, Goji berries and salt, turn the heat down to medium and add the quick cooking oats, cinnamon, stevia, and ground flax. Stir to blend ingredients.  Let the oats cook for a minute on the stove.  Transfer to a “super” bowl. Garnish with walnuts.  I like to add a little almond milk to make it creamy. Enjoy!
