Vegan Spinach Artichoke Appetizers
Football playoffs are officially here! Our friends and family will be gathering together these next few Sundays to cheer on our New England Patriots. So, that means food and fun will be a factor in our “Sunday Funday” get-togethers. These Spinach Artichoke Appetizers are so cheesy and delicious and super easy to make. Non-vegans at your party will love them too!
2 packages of Athens mini phyllo shells (30 shells)
Filling: 1 package of frozen spinach, drained
1 can of artichokes, chopped
8 oz Tofutti cream cheese, softened
1/4 cup veganaise
1/4 cup Tofutti sour cream
1/2 cup vegan parmesean
1/4 tsp red pepper flakes
1/4 tsp garlic powder
salt and pepper to taste
Directions: Thaw spinach and squeeze out the liquid. Add to a large mixing bowl the chopped artichokes, spinach, softened tofutti cream cheese, veganaise, vegan sour cream, vegan parmesan, red pepper flakes, garlic powder, salt and pepper. Mix until everything is blended. Using a small ice cream scoop, spoon the mixture into the phyllo shells. Bake at 350 for 15 minutes. Serve immediately.
