What’s better than coming home to a dinner that is already and waiting for you?  Nothing, in my opinion!  Lets face it, we are all busy and need a few easy recipes like this one in our repertoire!  What’s so perfect, is that this soup is ridiculously easy to make and takes just a few minutes in the morning get everything into the pot.  Once the ingredients are assembled, turn the pot on low and let the crock pot do its magic.

Vegan Split Pea Soup

Ingredients:

1 bag of split peas, rinsed

2 carrots, diced

1 small onion, diced

1 tsp minced onion

1 bay leaf

6 cups of vegetable broth

split peas, onion, garlic, carrots, bay leaf, salt and pepper
split peas, onion, garlic, carrots, bay leaf, salt and pepper

Spray bottom and sides of your crock pot with cooking spray.  Add the rinsed split peas, chopped onion, minced garlic, diced carrots, bay leaf, salt and pepper to the pot.  Pour in 6 cups of vegetable broth. Simmer for 7-8 hours on low.

    I made the vegetable soup and it was absolutely delicious! I don’t usually cook but you have definitely inspired me! Thank you so much for all your recipes! Can you post your chick pea cusually looking forward to following you and hopefully learning more from you too!!!
